POTATOWADAS (SPICED POTATO BALLS)

This is one of the favorite appetizers in India and now they have  become popular in U.K. and  in U. S. A. One of our American friends asked for the recipe and so I am giving it below. It is quite easy and quick to make if you have the following ingredients. I hope you enjoy them.
4 Servings
INGREDIENTS:
For potato mixture:
3 medium size potatoes boiled and partially
mashed.
1 chopped green Jalapeno (preferred )
or
½ tsp. red chilly powder
1 tbsp. of grated fresh ginger
1 tbsp. of fresh garlic paste
½ tsp. of salt (as per taste)
1 tbsp. of lemon juice
1 tsp. oil of your choice
½ cup of chopped fresh coriander leaves
Ingredients for the batter:
1 cup chick peas flour. If not available in the supper market, you
can get it from any Indian store.
1 tsp. all-purpose flour
¼ tsp. baking soda
¼ tsp. salt
¼ tsp. red chilly powder (optional)
1/3 cup of water
For frying:
2 cups of Canola/ your choice of oil. Use a small size deep frying pan so that the oil would be enough to cover the potato wadas (potato balls) while frying.

Want to go nutty with this yummy Banana, Mango and Nut Bread? Then let me introduce you to my version of boring old banana bread. (Not that I’m cheating on my other banana bread recipes… shhh.) Go for it and try out this version. It’s very easy, especially if you have a Bread Maker. But don’t worry, if you don’t have one, I’ll give baking instructions for baking other ways.
It is still summer in Florida and Mango season is still in full force. If you are a Mango lover like myself, you would freak out with this recipe. Everyone in my family gobbled it up before I had a chance to send some to Granddaughter in DC. I guess she will just have to wait for the next batch.

It’s very important to have all the ingredients at room temperature.
Ingredients:-
2 ½ cups All-Purpose Flour
1 Full egg plus 3 egg whites
1 Large ripe banana.
½ ripe medium or large size mango. Preferably, Kent or similar kind which has juicy pulp and not threads in the pulp. Skin it and cut into tinny pieces and keep aside.
½ cup chopped unsalted walnuts and roasted, salted cashew nuts together.
1 cup brown/ cane / white sugar.
1/3 cup melted butter/margarine/canola oil.
1 tsp. Baking Powder.
1 tsp. Salt.
½ tsp. Baking Soda.
2 tbsp. milk or water.
1 tsp. Vanilla essence.
1 tsp. Orange essence.

I love omelets. I love omelets so much I’ll say it again. Really omelets are so versatile. There are omelets with onions, omelets with cheese, omelets with artichokes; I could just go on and on. Also the omelet is the perfect South Beach Phase 1 meal. I absolutely live on omelets. It’s impossible to be bored with an omelet because you can always change the recipe as per your mood by adding different veggies, even ham or turkey if you want.
Anyways my recipe below is special because of the way I prepare the omelet. To me the perfect omelet should be light and fluffy, with the perfect portions of salt and fresh ingredients. For all types of my omelets I never use more than 1 egg yolk. This recipe calls for 2 eggs and just one yolk. If you are watching your cholesterol you can use half a yolk and 3 egg whites. Pay close attention to my method, as that is the best way to make sure your omelet is fluffy and white.
Egg Omelet
Servings for one
Ingredients:
2 Egg Whites
1 Egg Yolk
¼ Tea spoon of salt
2 Tea spoons of finely chopped onion
2 small Mushrooms. Slice one of them for garnishing and chop the other.
2 Tea spoons of oil
2 slices of bread of your choice. Make toasts.
A piece of butter/cheese of your choice.
