Spicy Pole Beans
Ingredients:
4 Servings
1 lb Green beans/Pole Beans
2 Tbsp. Canola oil
½ tsp. Red chilly powder
¼ tsp. Turmeric Powder
½ tsp. Whole Cumin seeds
½ tsp. Cumin powder
1 tsp. coriander powder
¼ tsp. Salt (as per taste)
2 tsp. Sugar, preferably brown sugar
2 Tbsp. finely chopped onion
2 Tbsp. finely chopped coriander leaves
2 Tbsp. grated coconut powder/ grated fresh coconut
½ cup of water
Cooking Directions:
Put washed green beans in a suitable microwavable bowl with ½ cup
of water and boil in microwave oven for 6 minutes on high settings.
Drain them.
Mix chilly powder, turmeric powder, whole cumin seeds, cumin powder,
and coriander powder together in a small bowl.
Put oil in a medium size pan on medium heat. Add chopped onions and
fry them for 2 minutes. Add the spice mixture and fry for 1 minute.
Addhalf of grated coconut and half of chopped coriander leaves and
toss them for a minute. Add boiled green beans, salt and sugar. Toss
them for a minute. Add 2 tbsp. of water and cover the pan. Cook on
low heat for 5 minutes or until the beans are soft. Toss them once
more and take them out in a serving bowl. Garnish with remaining
grated coconut and chopped coriander leaves as shown in the picture.
This is a side dish. Pole beans are used. It tastes good with boiled
rice as well as with any bread, pita bread, soft tacos, naans and
parathas (Indian breads).
