Like Hot Dogs and Burgers, Pakoras (meaning fritters) and Vadas
(meaning Patties)are extremely popular and are among some of favorite
foods in Eastern Countries, especially, in India and Pakistan. They are
served with pride, at elegant 5 Star hotels and restaurants as well as
at the smallest possible road side joints, known as Dhabas and
Thelas. Theseroad side Dhabas and Thelas are similar to the mobile
Western road side Hot Dog and Burger joints. Pakoras and Vadas come in
various forms and shapes. They are made with varied ingredients, and can
be vegetarian as well as non-vegetarian. They make excellent appitziers
and finger foods. One thing is sure that they are mouth watering and
loved equally by young and old. I hope you enjoy them as well.
I am trying to make this recipe easier by not making you start right from the scratch. Modernization by ready made food mixes by reputed manufactures, in Food Industry have made it easier for us and why not take full advantage of it? Like packets of various cakes and breads mixes. The following recipe is made out of Medu Vadai Mix, a product of reputed foods manufacturing company from India, called Gits. Their products are easily available in almost all Indian grocery stores, all over the world. This particular product is very economical and less time consuming. It also has good food value which one could judge from the information on the packet.
Mushroom Pakoras/Fritters
Makes about 20 pieces.
Ingredients:-
100 gm. Of Medu Vadai mix (half the packet)
¼ tea spoon of Red Chilly Powder
¼ tea spoon of Black pepper Powder/crushed Black Peppers
1 cup of water
20 small size white mushrooms. Wash them in the strainer and keep aside.
2 cups of Canola oil for frying.
Utensils required:-
A sufficiently large mixing bowl with a lid. You may use a large plate as a lid.
A Deep frying pan/fryer
A Frying spoon
A large plate covered with paper towel. Paper towel is optional. It is for
absorbing extra oil before serving if you are oil conscious eater.
A table spoon to drop the (fritters) in the hot oil (optional).
Normally, the mushrooms are dipped in the batter and dropped carefully,
direct into the heated oil by hand.
Cooking Directions:-
Make a batter by mixing all the first three ingredients and then pouring the water
into them. Mix well with a fork and cover the pot with a lid. Leave for 15 minutes.
Put the oil in the deep fryer on medium heat till it is ready for frying. About 5 minutes.
Lower the heat and dip the mushrooms, one by one into the batter and then drop them
one by one into the deep fryer. You will be able to put approximately 5 at a time either
by using table spoon or your hand (without gloves of course).Raise the heat to medium and fry them till they are golden brown. You will have to turn them around from time to
time so that they do not get burnt on any side and become evenly golden brown.
Take them out on the large plate covered with paper towel. Paper towel is optional as
mentioned above. Fry the rest in similar way and when all are done, put them in the
serving bowl with few cut in halves, on the top as shown in the picture. They taste
better when they are hot.
Serve them with Green Chutney of your choice /Tamarind Chutney/Tomato Ketchup.
