GRILLED TALAPIA FISH WITH SNOWPEAS AND CARROTS

Grilled Tilapia with Snow peas and Carrots
Ingredients:
4 Tilapia fillets (6oz.each). Thaw, if frozen.
1 Cup fresh snow peas, trimmed.
1 cup julienne-cut carrots
½ cup sliced green onion
1/3 cup light soy sauce
2 tbsp. finely chopped fresh ginger root
½ tsp. grated garlic
2 cups cooked brown rice / fried rice (optional)
Cooking Direction:
Preheat grill to medium high. Cut 4, 16 inch squares of aluminum foil,
coat one side of each with garlic flavored cooking spray.
Place 1 fillet on one half of each foil piece. Divide snow peas,
carrots and green onion equally and place on top of each fish fillet.
Combine soy sauce, ginger and garlic. Sprinkle evenly over each fillet.
Fold the other half of foil over fish. Fold over edges to seal foil packets tightly.
Place packets on grill and grill 10 to 12 minutes, turning carefully
the packets over halfway through grilling.
Serve with hot brown rice/fried rice.
