The above two pictures are of the traditional and famous Indian Tandoor, a clay oven known for the mysterious and unique flavor it brings to variety of foods such as meat, poultry, fish, vegetables as well as the various breads. While the food is being cooked or rather being roasted in this oven, it lets out such eastern aromas of freshly made spices that one doesn’t need any appetizers or starters before the main course. Actually, one gets very impatient to have the main course at the dinner table. The smoke that gets absorbed in the food along with the special fresh herbs and spices is all that about this unique TANDOORI FOOD (i.e. food cooked in Tandoor Oven) . The food gets marinated in special exotic recipe with freshly ground organic aromatic herbs and spices, sometimes mixed with fresh organic yogurt. Saffron is one of the exotic flavors used in these recipes.
Chicken Tandoori is the most worldwide popular Indian traditional roast chicken and same is with Chicken and Mutton Tikka, Sheekh Kebabs , (Chicken and goat meat/lamb meat cooked on skewers) which are charred grilled to perfection in the Tandoor Oven under the aromatic smoke. In this oven everything gets cooked instantaneously because the oven is kept extremely hot by continuously replacing the coal supply at the bottom of the oven. That is one of the reasons why the food is deliciously tender and juicy.
Now the market is flooded with various kinds of such ovens made out of stainless steel as well as wooden.They make for commercial as well as domestic use. Although nothing like having food from a clay oven, these are easy to use and manage, being electrical or gas ones. But those who don’t want to invest in such ovens, could get more or less similar results out of regular ovens by cooking over highest heat with proper marinated food.
