UTTAPA WITH GREEN CHUTNEY
Uttapa is a kind of crepe made out of rice and lentil known as Urad Dal. The right proportions of these two ingredients are soaked separately overnight in water. Then they are individually made into pastes and these two pastes are mixed together thoroughly. After this, we set them aside, covered for at least 4 hours in a warm place to rise almost like bread dough.
Thanks to modernization we can get these pastes in ready to use packets in a powder form. Just follow the instructions on the packet and you are ready to make this very popular and quite healthy Indian dish. In the southern part of India it is a part of daily meal, almost like bread for some. Mostly it is accompanied by a coconut chutney and sambhar. Sambhar is a kind of spicy soup made out of lentil and vegetables. One could get a ready to use packet of this in any Indian grocery store. There are many brands. The most popular brand is Gits.
Uttapa with Sambhar
6 Servings
Ingredients for Uttapa:
1 Packet of Dosai with free packet of Sambar (included in the packet).
½ cup of chopped onions.
¼ cup of chopped coriander leaves (optional).
1 tsp. of chopped green chilly (optional).
2 Tbsp. of Canola oil.
½ cup of warm water.
3 cups of water (room temperature).
Mix all the above ingredients together to make the batter and keep it aside covered for 10 minutes or until Sambhar is ready.
It is advised to have Sambhar prepared before Uttapas so that Uttapas could be served hot as soon as they are made.
Ingredients for Sambhar:
50 gm packet of Sambhar Mix(included in Dosai packet.If not buy separate packet)
2 Tbsp. Canola oil
¼ cup chopped onions
½ cup chopped tomato
4 cups of water
Utensils for Uttapa and Sambhar:
Medium size non-stick pan with a lid and a spatula.
A bowl with a lid to make the batter of the above ingredients.
A small cloth (6”x 6” size) / a paper towel which could hold water(Bounty type).
A bowl to keep 1 cup of water. This is extra water to dip and squeeze the above mentioned cloth/paper towel for spreading the batter on the pan.
A quart size sauce pan with a lid and ladle spoon to cook Sambhar.
Cooking directions for Sambhar:
Mix the ingredients in the Sambhar packet with 3 cups of water. On low fire warm
2 table spoons of oil for a minute and add chopped onion and toss them for 2 minutes. Increase the heat to high and add chopped tomato and the Sambhar mix. Stir time to time till it starts boiling. Lower the heat and cover the pan. Cook for 8 to10 minutes. Put in a serving bowl covered. Serve it in small bowls with Uttapa.
Cooking directions for Uttapa:
On cold pan put 1/6 of the batter in the center and spread it around the pan with the help of the wet cloth/paper towel, moving it clockwise. Put the pan on high heat and cover the pan with the lid. Leave it for 3 minutes. Take out the lid and flip the Uttapa with the spatula on the other side. Leave it for 2 minutes without the lid. Fold it into half with the spatula and serve it with green coconut chutney as shown in the picture. Sambhar should be served in a separate bowl.Remove the pan from the fire and sprinkle some water to cool it down before spreading the batter for the next Uttapa. Repeat the same cooking directions for the rest of the Uttapas. It tastes nice with green chutney and Sambar, a spicy dal made out of lentils. Actually, these to items are served along with Uttapa as side dishes.
